Beta-carotene

Beta-carotene is an antioxidant as well as a red or orange colour pigment deriving from fruits and vegetables that provide health benefits to our eyes, skin and immune function.
Beta-carotene is also known as Provitamin A, which mean after ingested, our liver converts beta-carotene into preformed vitamin A. As vitamin A is a fat-soluble vitamin, it is best to eat with foods that contains fats (preferably healthy fat) for optimal absorption.
Common food sources rich in beta-carotene include fruits and vegetables that are orange or yellow colour, such as carrot, pumpkin, sweet potatoes and rock melon. It can also be found in dark leafy vegetables such as spinach.
