In the production of Rice Kefiran, the Lactobacillus Kefiranofaciens, which is a part of kefir grain, is isolated, and rice is used as a medium to produce the viscous polysaccharide called kefiran. Rice Kefiran contains gamma-aminobutyric acid (GABA) and rice peptides, which contribute to blood pressure, and blood glucose management.
